1. Draw the molecular structures (showing all bonds) and the reaction
that occurs between stearic acid (a saturated fatty acid with 18 carbons)
and isopropyl alcohol (a three carbon alcohol with the -OH group on the
center carbon). Clearly diagram how the reaction occurs.
2. Find the melting points for two fatty acids--one saturated
and one unsaturated--having the same number of carbon atoms in each molecule.
Outline the reason for the observed difference in melting points; include
a diagram that clearly supports your rationale.
3. Draw the structure of the phospholipid formed from glycerol,
ethanolamine, phosphate ion, and two stearic acid molecules. Clearly
show the hydrophobic and hydrophilic regions. Show how a collection
of these molecules would "self-assemble" in an aqueous solution.
